Peanut Butter Eggs and Caramel Eggs

Most popular fillings this time of year to pair with chocolates are peanut butter filling and caramel filling. I'll show you how to make the homemade (more delicious) version of these using simple ingredients and little bit of technique!

The recipes for the fillings are listed below. The caramel filling should give you plenty to fill 8 chocolate eggs, whereas the peanut butter filling recipe makes enough to fill 16 eggs.

These eggs can be made ahead of time since the fillings are room temperature stable and do not need to be refrigerated.

Chocolate Peanut Butter Eggs and Caramel Eggs

  • Prep: about 1 hour + chill
  • Bake: 0
  • Total: about 1 hour
  • Yield: 8 eggs each flavor


Caramel Filling

(this makes enough caramel to generously fill 8 eggs with caramel, with leftovers for your sundaes :) )

  • 1 tsp of lemon juice (strained)
  • 3/4 cup (143g) granulated sugar
  • 1/3 cup (73g) heavy cream, warmed
  • 5 TB (35g) unsalted butter
  • kosher salt to taste

  1. Gently heat your heavy cream ( I use about 20 seconds in the microwave) and set aside.
  2. Add granulated sugar to a small saucepan and pour lemon juice on top. Rub in with your fingers.
  3. On medium heat, stirring the whole time, melt (carmelize) the sugar until it reaches a golden amber color.
  4. Turn heat to low and slowly pour in your warmed cream while gently stirring.
  5. Remove from heat and add your unsalted butter.
  6. Cool completely and add a generous pinch of kosher salt to taste.
  7. Make sure the filling is cool before filling your eggs!

Crispy Peanut Butter Filling

(this is enough to make 16 eggs)

  • 3 ounces (85g) white chocolate (compound, chips, or real chocolate is fine here)
  • 1 TB (10g) unsalted butter
  • generous 3/4 cup (85g) peanut butter (creamy or crunchy)
  • 1 TB honey
  • pinch of salt to taste
  • 1 + 3/4 cups of Rice Krispies

  1. In a microwave safe bowl, melt white chocolate, butter, peanut butter, honey and salt until completely melted, about 20-30 seconds.
  2. Add your Rice Krispies and stir until combined.
  3. Cool before filling your eggs.
